Hosting a dinner party should be as seamless and enjoyable as possible. When you hire Maya Rosa Catering, you can count on them to handle the details while you enjoy spending time with your guests. We spent the evening savoring the flavors of the unique dishes created by Chef Miguel Martinez. You are able to customize your menu to your preference. I requested a tapas style dinner so we could try multiple small dishes throughout the night. This blog post was created to give you an inside look on what to expect from a Maya Rosa Catering experience.

To start the evening, the first dish presented to us were the Crispy Black bean and Sweet Plantain Fritters, blending savory and sweet flavors in every bite. They’re paired with a creamy, spiced jerk coconut coulis that adds a velvety touch of island-inspired heat. Topping it all off is a vibrant mango salsa, bursting with fresh, zesty sweetness that ties the dish together for a perfectly balanced, tropical-inspired plate.

Next up, the Golden-Brown Roasted Vegetable Arancini offered a delightful crunch, with a warm, savory center packed with hearty flavors. They rest on a silky sweet corn purée, adding a rich, buttery contrast to the dish. Bright, tangy pickled onions complete the plate, bringing a pop of color and a refreshing zing that cuts through the richness for a perfectly balanced bite.

Easily my favorite dish of the night had to be the Tender Smoked Wings, kissed with a rich, smoky flavor that takes the spotlight. They’re served with a luscious confit garlic aioli, adding creamy depth, while a drizzle of fermented hot honey brings a sweet and spicy kick. A poached red pepper and onion relish rounds it out with a tangy, savory finish that ties all the bold flavors together seamlessly.

Then we had the juicy Grilled Chicken Skewers, perfectly charred, and rested on a bold black bean and smoked chili pineapple puree, combining smoky, sweet, and savory notes. A refreshing squash salad adds vibrant color and texture, tying together the dish with a light, seasonal touch for a harmonious balance of flavors.

And last, but certainly not least, the warm, flaky Pumpkin Cheesecake Empanadas offer a luscious, spiced filling that’s perfectly balanced with a sweet and tangy apple chutney. A generous sprinkle of cookie crumble adds a delightful crunch, while a dusting of powdered sugar provides the perfect finishing touch to this indulgent, fall-inspired dessert.
